Hill Street Fried Kway Teow

This stall has always been on my list for the longest time. The previous generation proprietor had won many accolades. Unfortunately I have not been able to try his cooking. But I am equally impressed by this next generation's control of flavours! 

The palate is extremely well balanced with the wok hei and the aromas! Not too sweet, a hint of char and intentional bitterness, and fragrance from the careful selection and measure of condiments and ingredients. The Bean Sprouts and Spring Onions complements each other. The sweetness from the generous portions of Lap Cheong  (Chinese Waxed Sausages). And the umami and slight bitterness masterfully played with the caramelized dark Soya Sauce, crispy Pork Lard, and the Cockles. 

The queue is not that long, but the wait is. He meticulously cooks each plate, taking its time to soak the flavours into the noodles. In fact, this is on top of the fact that they have portions of pre-fried noodles on standby. But I must say, the heat really accentuates these rich flavours, and diminishes every minute its out. I do not recommend you packing this. Have it there and enjoy!
