Mazni's Mee Rebus (former Changi Airport Staff Canteen)
Tucked away in the furthest corner of the busy Amoy Food Centre, lies a hidden secret. Even her previous location was fairly exclusive - the staff canteen in T1 Changi Airport. I remember being brought there when I was much younger, walking from the carpark to a stairwell. It was and still is one of my favourite Mee Rebus. (the other being the former Tg Pagar railway station).
Immediately I love how its sauce is not too thick or gooey like most who use too much corn starch. Its viscosity is just enough for you to slurp some sauce into each mouthful.
And the sauce, a perfect balance between savoury and sweet. Unlike others which tend to be just sweet. Dash of lime, and a splash of the dark soya sauce with chilli and you are set!
The yellow noodles were tossed al dente, making each slurp so satisfying. Unfortunately the Bergedil (potato ball) was lacking spices and flavours, and its skin was a bit too dry. Otherwise an easy favourite!
