89 Carrot Cake
I had read about this little hidden gem of a stall, a nondescript stall named after the block of the food centre it resides in. He takes his time to “feel” for the heat as he takes fairly long to dish out a single plate of carrot cake. The process is quite similar to Hokkien Mee where he prepares in batches, preparing the cake to a certain flavour and char (as you can see in the second photo). Only when the order is placed, will he throw the final touches like colour and spice to serve.
The caramelised charred bits together with the tangy spicy chilli sauce made it resemble like an oyster omelette but with the bite of chunks of carrot cake. Slightly pricey for a small plate at $3.
He seems to take his time with cooking each plate, as he shuffles his two spatulas in an almost OCD fashion, clinging and clanging to a rhythm.
