Da Dong Prawn Noodles (and Pork Liver!) - Updated
Heard about this next Gen stall that boasts a solid bowl of prawn noodles. So glad to see educated, well mannered youth taking over a humble enterprise, aiming only to please their customers!
Tasting the soup, I was surprised that it had such a strong garlic taste that complements the rich prawn essence. I felt they've since reduced the sugar to bring greater depth and balance to this soup. Very rich on the palate indeed.
The noodles has a different texture to the ones elsewhere, they're more springy and less greasy - leaving a clean feeling in each mouthful. You don't get as thick as a sambal as elsewhere, hence it tends to come off as a bit light but I'd rather call it subtle - certainly less jelat.
The fried pork lard lacks mastery - i feel it has the potential to be much tastier. The lean pork slices are tender, and the prawns are fresh and plump.
Update: Today I was treated to a portion of secret Pork Liver! OMG. It is the cleanest, most perfectly blanched livers I've ever had. Dosed in Soya Sauce and topped off with Chinese Coriander, it is such a Charm!
