Tai Hwa Rivalry - Hill Street vs Hong Lim

In an alleged rivalry, I'd term it a ghast confusion. Perhaps they are riding on the fact that they both have similar names and dishes. It is only Hill Street Tai Hwa at Crawford Lane that was awarded the Michelin Star. Many have told me that they taste similar, I couldn't disagree more. 

The most obvious difference lies in the texture of the noodles. Hill Street has a handmade firm bite, whilst the Hong Lim one is your cheap factory made Mee Pok. The base sauce is also worlds apart, lacking in depth richness and flavour from Hill Street. And the ingredients, at Hill Street seemed drier and roughly manhandled.
