Lei Garden - Michelin Star

Lei Garden had recently been awarded One Michelin Star in the recent 2016 inaugural awards. I was invited to a special Solemnisation ceremony here and we were in one of the private rooms where we were simply spoilt. The service was impeccable! Hot teas were poured and plates were changed by eagle-eyed waitresses. And what surprised me was that they had placed each dish on our tables to first allow us to take instagrammable photos (we were even coached as to which angle would be best!). But only before they would take it aside to portion it out for everyone.  

Every ingredient was certainly of the best quality. Starting with the Peking duck, sliced perfectly and wrapped with slots of Spring Onions - every piece looked identical. 


This Deep Fried Grouper  is done with the utmost impeccable control of a very large fire (known to chefs as the Hong Kong Fire). Such that not just the outside is crisp but also the fins and bones are crunchy enough to bite yet, the meat is still tender and firm. Amazing... Topped off with fried Garlic and Spring Onions.
