"Snacks"

Oyster, Jalepeno Ponzu, Salmon Roe and Pickled Ginger Flower
Amazing burst flavours in this bite! Each component complements and accentuates each other. The Jalepeno and the Ginger Flower, the Ponzu and the Oyster brine, the Pickling and the Salmon Roe. My favourite dish today. 

Chorizo Croqueta, Piquillo Mayo
This dish was a miss. The batter ran from the potatoes, the cheese and the mayo that lost some flavour from the Piquillo peppers (though a bit more heat would have brought home the concept)

"Tapas"

Roasted Cauliflower, Cauliflower Cous-cous, Serrano Ham and Cheese
The roasted Cauliflower was bland but I felt was clean rather, a good respite from the Serrano Jamon and Cheese in the Cous-cous. Perhaps the Jamon should be in the cous-cous rather than on top. Nice dish overall. 

 Padron Peppers, Sun-dried Tomato Pesto, Manchego Cheese
This was very tasty! The peppers from the Spanish municipality of Padron were mild like capsicum, with a salted pesto which was enhanced by the cheese from the Manchego Sheep. 


"Mains"

Salted Cod 'Rafols',  Tomato & Iberico Chickpeas, and Black Garlic
The washed Salted Cod from the Catalan family business 'Rafols' had a firm chewy texture. Tomato and Iberico Chickpeas weren't magical but perhaps made better with the Black Garlic paste. 

Pigeon, Forest Berries Escabeche, Burnt Rosemary Polenta, Crisp Shallots
Pigeon was a tad gamey, but was cancelled out by the citrusy Escabeche (a Mediterranean acidic mixture). Complemented by the slight bitter-burnt fragrance from the shallots and the pigeon jus.
