Janice Wong's new Restaurant at the National Museum Singapore

Janice Wong opens her first Restaurant in Singapore, nestled in the corner of the National Museum. It combines both a retail store and a concept Dim Sum restaurant and bar.

The Chef de Cuisine is Chef Ma Jian Jun and Pastry Chef Derrick Wong.

BlackRed Duple Noodles $18

It is interesting how each dish provides you with a Gluten part indicator. With this dish given a Medium. Based on a "Duple" two main beats on a bar, this black and red contrast hangs also as an art piece on the wall. You literally can taste the "heaviness" of the gluten. Just like the beef broth, it is light and refreshing. Nothing being too overpowering, nothing giving you an MSG spike. The Braised Beef Briskets tender and supple sharing a simple bite to the noodles.



XLB (Xiao Long Bao) Tasting Platter

Whisky Pork; Truffle Cheese Chicken; Foie Gras Pork Cherry; Shrimp Ebi Kombu

With four very strong sounding flavours, the XLBs as they are named, are blended subtly to create hints of flavours yet not stealing the authenticity of a Xiao Long Bao. Best eaten hot (leave those cameras for your next visit!)



Signature 5 Dumplings $15

Both a Visual play and deliberate on Textures - the menu tells you what to expect with each dumpling. From Left to Right:

Elastic - Aubergine Peppers
Crystal - Scallop Prawn
Transparent - Mushroom
Matt - Chicken
Crispy Skin - Potato Cured Pork



My favourite of the dumplings is the Mushroom one here. An amazing smooth and light gluten gel enveloping a blend of mushrooms. Imagine a thin skinned "Soon Kueh" burst in your mouth.



Whimsical Buns $4 each. (Low Gluten)
Liquid Egg; Braised Veal; Minced Vegetables

You would recognize the Yellow one to be "Golden Custard" in most dim sum places. But having Chives and Spinach in one and Braised Veal in another is interesting.
