Nan Hwa Chong Fish Head Steamboat

We were round the corner at The Sultan and had a craving for something savoury and soupy. This place seems to be perpetually crowded. And most of the time, I only see people waiting on empty tables... We weren't that hungry so we were prepared to wait. 

15mins before a menu is chucked at you. Another 15mins before someone comes for your order. An close to an hour before you finally get to eat. So be warned, it's a bit of a wait... 

I'm not the kind for waiting, but I have to say, this is definitely worth the wait! It seems the long preparation time is owed to the slow cooking via Charcoal. They have what looks like a coal mine, dark and hot, churning these out. 

You get to choose from the four variants: Pomfret, Grouper, Song, Red Snapper. It is then accompanied by an assortment of vegetables such as yam, cabbage, spinach, and seaweed. 

The soup is what is to die for... Fragrant from the coals, yet sweet from the bones of the fresh fish. And the fish, firm and fully cooked, yet not dry nor powdery. With a bowl of hot grainy white rice suffices.
