Kee Hock Beef Hor Fun - Clementi Central

Located at the back of the Clementi Central Food Market, this stall is one of the few stalls there that has a queue. Others being the Chicken Rice, Song's Fish Soup, Seng Lee's Congee, and previously Nam Kee's Hokkien Mee (to be mentioned in the next blog post). 

The queue moves pretty fast here. The Horfun is stir fried in advance, and stored in a warmer. This is perhaps what sets him apart from his competition. The wok hei is strong here, with enough soya sauce to get a carmelization to it. 

It also differs from your usual Geylang Beef Horfun in its gravy. The one in Geylang is thicker, and sweeter. It tends to get a bit overwhelming after a few mouthfuls. Whereas this one, is lighter and fragrant, with silky strands of egg makes it very pleasant to slurp - especially after a crazy lactic-inducing workout in the nearby Fitness First. 

Its beef is different from Geylang and other Tze Char stalls as well. Not many may be able to tell the difference, but the amount of tenderizer, a Sodium Bicarbonate, changes the tastes and the bite of the beef. Here, they seem to use considerably less, allowing a natural taste.
