Chabuton Ramen - Orchard

I've noticed on Facebook that diners have been raving about this Michelin-starred ramen place. Apparently it founder, Yasuji Morizumi is the world's FIRST ramen chef to attain a Michelin star. So I had to try it for myself, eager to add a stripe to the Ramen Wars chapter.

We arrived just before the last order, there weren't much people around at 9pm.

I simply ordered the signature Chabuton Tonkotsu Ramen ($11.90, $8.30 for smaller portion). You need to add $3.00 for soft boiled egg and buta kakuni.

Perhaps it is the over hype. But true to a friend from Suzuki Ramen, you will be able to taste the effort put into a Tonkotsu broth. Chabuton's broth seems to have too much going on... Its milky and salty, didn't really get the full bone flavour from good quality pork.

The size of the Char Siew was good, and did not taste too bad. The noodles had texture but wasn't made on the spot like the premium ramen bars would (like Suzuki Ramen).

My main disappointment lies in the most basic yet commonly taken for granted ingredient. A properly timed Ramen Egg would be soft-boiled inside and firm on this outside, and flavoured according to the Chef's tastes. As you can see, Chabuton's eggs are almost well done!

If you have no where else to go for a bowl of Ramen in the Orchard area, this may be an option. Otherwise, not a place I would crave to come back.
