Ting Heng Seafood - Best of Tiong Bahru

Situated in a conspicuous corner of Tiong Poh, this place is bustling with people during dinner time! Large crowds of Chinese businessmen having supper before/after their entertainment, families having Steamboat, or just couples or friends having a meal.

They say that in order to really know the skills of the chef, is through the most basic dish: Fried Rice. This is because, the sensitivities involved in controlling the fire (what they call as Wok Hei), to produce a pre-char fragrance, and a texture of granular bite. 

What impressed me was how the Chef chose not to use Soya Sauce as flavouring. Gives the old school, home cooked feeling, but also means that he needs to derive his flavours from salt.

But what blew me away, was yet another seemingly simple dish, which is almost a must at every Tze char dinner - the Hotplate Beancurd. This variant chose to have the "No Frills" option, no Seafood or colourful Vegetables - just Minced Pork and Spring Onions. The sauce is so tasty but a bit salty (might be the MSG), but it goes so well with rice... 


A highly recommended place for good food with an old school feel.
