Sin Ming's Ducks - Roast vs Braised

If you are ever in the area when you send your vehicle for inspection at LTA or for some repairs or maintenance, cross the road to the hidden coffeeshops within the HDB estates.

In the corner coffeeshop, you will find the 3 hidden gems!
Braised Duck, Roast Duck and Bak Kut Teh.

It is always hard to decide which one to go for. Hence I would usually bring a group and order both! The Roast duck has Skin Thin and Crispy, with a nice layer of Juices underneath. While the meat remains tender and firm. The overall Fragrance of the Roast is so appetizing!

Don't forget to order a portion of the Roast Pork as well!

The Braised ducks on the other hand owes its flavour to the braise of the juices. Often extremely salty, it will go very well with a bowl of plain porridge or for the salt-lovers like me, with plain rice.

Because it is braised in its own juices, you will find that the entire meat is more succulent and less dry compared to its roasted counterpart. Most will run away from that 1 whole centimeter of fat below its skin, but to me, this is heaven...
