Old Chengdu Szechuan Restaurant

Losely translated, this is called "Saliva Chicken". It means after you have a go at this cold dish,you will start salivating involuntarily. One of my favourite dishes here. It has the mouth of a Hainanese chicken where they soaked the chickens in ice right after boiling.  

This dish is so interesting, stir fried Long Beans but they are not cut - served as its full length. Does not look or taste apparently spicy but it will kick it. 

The MaPo Tofu is spicy with a nice silken texture - great with rice!

It was only the two of us, hence we did not order the Signature fish - "fei teng yu" (沸腾鱼). So we ordered something similar which is the "Water Cooked Sliced Fish". The fish is cooked till it melts in your mouth. Not like you will have much sensation left in it anyway. But the vegetables underneath remains fairly crunchy and very very tasty, soaking up all the salt and chilli.
