Laut Collective

 Today I had to privilege to sample the wonderful creations of an inspired beginning. 
The Laut Collective is a romantic ideal of bringing matrimony to traditional and modern palates via both Food and Beverage mediums. On the plates, they source regional produce and ambitiously deconstruct matriarchal almost indigenous recipes. In the glasses, recreating familiar cocktails with almost forgotten local botanicals. I like where these boys are taking flavours and memories...  

The Thunder Tea Rice - a playful and very bold dish! Not for the fainthearted, for it pulls the nastiest of aromas albeit with much genius. Smelly beans! Century Eggs! Prawn Jus! Thunder Tea! Yet so beautifully this mash layers into a deep umami of freshness and if i may say in cliche "bitter-sweetness". The illegitimate child of a Nasi Ulam and a Risotto - I couldn't stop eating this. 

The Laut Curry, was an attempt. Tossing fresh seafood, milking its goodness into a mild Rendang broth made viscous with the enzymes from Okras and Eggplants. I wish it had more spices. It has the potential to have great depth, but the ingredients would have to be cooked  painstakingly separate.  

The Grass, a cocktail they prepared with "Rojak Gin, Toasted Rice Vinegar, Pickle Brine, Grass Kombucha", which I was constantly reminded to "splash soda", was a great palate cleanser. If I froze this, it would have been a solid Dirty Martini for me. Yums.
