Wah Kee Big Prawn Noodles @ Pek Kio Food Centre

Seems like every time I come here, the Lady Boss would always scream: "Only Big Prawn Left Ah!" Perhaps it is Coercible Marketing - when you adopt a "Take It or Leave It" attitude. 

I've witnessed it myself. If you are ordering 5 bowls of $3.50, she roughs you up with a bad attitude. If you order two bowls of the $10 Big Prawn noodles, she serves you with a sweet smile. 

To be really honest, I could not tell the difference between the $10 prawns and the $20 prawns... If you are there for the Noodles and the Soup, then just get the $10 version. 

There seems to be two types of Prawn Broth around, and I am certain that this has to do with the type of prawns that they use. When you use the shells and roe of larger prawns, you will get a Sweeter broth with a Redder colour. When you use the smaller grey prawns, fry and blend them, you then to get a Saltier broth with a darker Brown colour. 

The Dry Noodles is not like the others, where they use a thick paste usually with a dried shrimp blend. Here they simply use chilli paste and a dash of its broth. Topped off with a generous amount of Pork Lard and Fried Shallots.
