Master Tang's Beef Brisket & Wanton Noodles @ Sixth Ave [CLOSED]

There had been so much hype, and snaking queues at a coffeeshop I used to own at Sixth Ave. I had to investigate what was so popular. 

Apparently a retired Head Chef from Crystal Jade, Master Tang, had shifted in to sell his famous HK style Beef Brisket Noodles with his Signature Chilli Oil. He had shifted from Chinatown where he had ran his Guang Zhou Kitchen. 

At a fraction of the cost you would get from Crystal Jade. A sturdy elder, with hands battered and trained from years of chinese cooking. His stall, typical of restaurant standards, clean and extremely organised. 

The Beef Brisket is soft and tender, and braised well almost comparable to what you would get in Hong Kong. What differs I feel are the noodles. Perhaps the flour he uses here, but the handmade noodles in HK are definitely more springy. 

The Soup is clear and light, sacrificing on flavour. The dumplings are adequately wrapped, with juicy pork. Perhaps lacking in water chestnuts and in size.
